Super Healthy Salmon Burgers

So this recipe is super duper easy, and really doesn’t take much time at all. As yesterday turned into such a beautiful sunny day, I had to cook something fresh and summery to enjoy probably one of the last times in the garden of an evening. We have only recently finished our decking, so we haven’t had many chances to east al fresco.
So this dish will take roughly 10 minutes to prepare and 10-15 to cook.


You will need-
Frying pan
Cooking pot
Blender (handheld will do)
Ingredients (for 2 people) obviously alter for more people
2 salmon fillets
2 tsp Red Thai curry paste
Ginger (1/2 thumb size)
1 tsp Soy sauce
Half a bunch of coriander (or jar herbs if unavailable)

Rice to serve
Salad  
1 Cucumber
2 Carrot
2 tsp White wine vinegar


To start prepare all your ingredients before starting to cook. Also prepare your salad by using a potato peeler on the carrot and cucumber, and then add your white wine vinegar. Easy.
So here we go...
1.       Tip the salmon, paste, ginger, soy and coriander into the blender (if you don’t have a blender, like me. I used a handheld blender and mixed in a bowl)
2.       Pulse until roughly mixed. (I know this picture isn’t the most attractive picture, but trust me, it will taste good)
3.       Now put the rice on, and tip out the mix and make 2 burgers. Put the spring rolls in the oven
4.       Fry the burgers for 4-5 minutes on each side
5.       Your dinner is now done. Serve all together with some Thai sweet chilli sauce on the side if you fancy
